The appellation of Gigondas is produced in the only commune of Gigondas. The grape varieties authorized for this appellation are: Grenache rouge, Syrah and Mourvèdre. For the Gigondas of Notre Dame des Pallières, most of the grenache is used with Mourvèdre.
Pretty intense garnet color with amber reflections. The nose is rich, with notes of ripe red fruit, kirschy notes, spicy notes, liquorice. The mouth is concentrated and full, fleshy with fine, silky tannins, great length on the finish.
Culinary pairings: local cuisine, rabbit with garrigue herbs, wild boar stew.
