In San Marzano, the winegrowers take care of their small vineyards as if they were gardens. Their stories are many, as are the names of their families. They chose a name, Talò, to thank each family and pay homage to each story.
The grapes are destemmed and, before pressing, they are left with their skin for a few hours at low temperature in order to extract the delicate floral notes while preserving the varietal profile. Fermentation takes place in stainless steel tanks for 13-15 days at 15 ° C.
