Between the Ionian Sea and the rocky coast, The wild bushes of THYME trust the wind with their scent. A wine that retains the essence of the Mediterranean scrub: its delicate flowers, the fierce sun and the strong wind. He's crispy and he loves seafood.
The grapes are destemmed and, before pressing, they are left with their skin for a few hours at low temperature in order to extract the delicate floral notes. Fermentation takes place in stainless steel vats for 13-15 days at 15 ° C in order to preserve the varietal profile.
Color: straw yellow.
Aroma: delicate white flowers with notes of citrus and Mediterranean scrub.
Palate: notes of thyme and rosemary. Elegant, fresh and mineral.
