The vines are planted on a terroir made of red clay mixed with rolled pebbles. These are rather arid soils with low vigor, very exposed to the Mistral. The vineyard has been cultivated without fertilizers, weedkillers or chemical treatment for more than ten years. The soils are plowed periodically, maintained with the help of organic compost in the fall and the protection of the crop is done only with natural products such as sulfur, copper, plant infusions (nettles, horsetails, wicker. ..) and biodynamic preparations.
This wine has a bright pale yellow color, on the palate it is supple but with a very present and honeyed structure.
It will go well with sea fish (sea bass) or white meat in sauce. A vol au vent with meat or seafood. For cheese, choose a faisselle, a Vacherin Mont d'Or.
